With over 20 years’ experience across hospitality, contract catering and large-scale food service environments, Symon Moth brings a rare combination of culinary craft and commercial leadership to his role as Senior Operations Manager and National Culinary Leader at Eurest.
Symon’s career began in the kitchen, and that foundation still shapes the way he leads today, built on the belief that great operations start with a great food offer. Over time, he’s evolved from hands-on chef to national leader, now responsible for driving operational performance, commercial outcomes and culinary strategy across a diverse portfolio.
We spoke to Symon about his career, what’s driving change across Eurest’s culinary offer, and what keeps him motivated after two decades in the industry.
How did your career journey lead you here?
My career started in the kitchen, and I think that’s exactly why I lead the way I do today.
Over the years I’ve moved from chef to operator to national leader, but the core belief hasn’t changed – great operations start with great. Everything I do now, from commercial strategy through to culinary direction, is built on that foundation.
What does your role involve day to day?
In my current role, I lead both the operational and culinary direction across a diverse national portfolio.
That spans everything from, developing national menu frameworks and retail strategies, through to supporting site teams directly to help them deliver consistent, high-quality customer experiences. One of the initiatives I’m most proud of is our national Culinary & Retail Guide, which has brought structure and alignment across menus, pricing and seasonal planning all while keeping a sharp focus on cost control and efficiency.
What do you enjoy most about your role?
Building high-performing teams and helping people grow.
Whether that’s developing chefs, supporting operators, or working alongside clients to deliver better outcomes, that’s what motivates me most. I bring a practical, solutions-focused mindset shaped by years in industry and a genuine passion for food and people.
